Sweet Potato Custard (8-10 months)

1 cp mashed cooked sweet potato
1/2 cp mashed banana (about 2 small)
1 cp evaporated skim milk
2 tbsp packed brown sugar
2 beaten egg yolks
1/2 tsp salt
nonstick cooking spray
1/4 cp raisins (opt)
1 tbsp sugar
1 tsp cinnamon

In a medium bowl, stir together sweet potato and banana. Add milk, blending well.

Add brown sugar, egg yolks and salt. Mix thoroughly.

Spray a 1-quart casserole with cooking spray. Transfer sweet potato mix to dish.

Combine raisins, sugar, cinnamon; sprinkle over top of sweet potato mix.

Bake @ 325 for 40-45 minutes or until a knife inserted near centre comes out clean.
